FOUNTER Joins a Professional Baking Competition
From 10 to 12 September 2026, the 6th Bread In The City World Bread Competition – China Selection National Finals brought professional bakers from across China to Hall 11.2 of the Canton Fair Complex in Guangzhou. The competition is organised under the SIGEP and Bread In The City banners.
FOUNTER was the official equipment sponsor of the National Final, supplying the mixers competitors worked on across all three days.
Professional Equipment Powers a Professional Competition
Few steps shape the final loaf as much as mixing. It sets gluten development, dough temperature and batch-to-batch consistency — and once a mix goes wrong, nothing downstream recovers it. On a competition floor, where bakers work to a clock and cannot repeat a batch, equipment that behaves predictably becomes part of the result.
Two FOUNTER machine types were in use:
- Stand mixers — for whipping, creaming and general ingredient work across pastry and viennoiserie. - Spiral mixers — built for dough, where the rotating bowl and spiral hook develop gluten with less heat build-up.

Craftsmanship on Display
Good bread rewards precision: the right flour, the right hydration, the right moment to stop mixing. But what filled the display tables in Guangzhou went well beyond technique — scored sourdough, laminated pastry, sculpted showpieces, each one a baker’s own idea carried through to the finish.
FOUNTER had a front-row view of that work taking shape, and three days among the people doing it.
What a Competition Floor Teaches
